Ingredients of Pepes Ikan Cod - Steamed Cod
- It’s 2 pieces of Cod Fillet.

- Prepare 3 stalks of spring onions, cut in 1cm length.

- Make ready 6 of cherry tomatoes, cut in a half.
- It’s Pack of baby corn, cut in 1cm length (this is optional. The reason am using it cos am clearing out my fridge).
- Take Bunch of basil.
- Prepare 2 of kaffir lime leaves.
- Prepare 2 of bay leaves.
- Prepare 1 of egg.
- You need 3 tbsp of oil.
- Make ready of Spice Paste :.
- It’s 5 of shallots.
- Take 3 of garlic cloves.
- Make ready 2 of bird eye chilies, to get a little kick or skip.
- Take 5 of candlenuts.
- Make ready 1 of thumb size of ginger.
- Make ready 1 of thumb size of fresh turmeric or 1 tsp turmeric powder.
- You need 1 tsp of coriander powder.
- You need 1 tbsp of salt.
- Take 1 tbsp of sugar.
Pepes Ikan Cod - Steamed Cod instructions
- Pat dry the fish really well and set aside.
- Grind the spice paste ingredients using food processor until smooth. Put of oil to loosen the texture. Heat 3 tbsp oil in a pan. Sauté the spice paste, finely chopped coriander, kaffir lime leaves and bay leaves until fragrant. Add more salt or sugar if needed. Put a side and let it cool..
- Once the spice paste is cooler, add the egg, spring onions, tomatoes, baby corn and basil and mix well..
- Grab one piece of banana leaf (the size enough to wrapped 1 cod fillet). Add 1 tbsp the paste mixture. Add the fish on top then cover the fish with 2 tbsp paste mixture then wrapped the fish and secure on both edge with clean tooth paste. Repeat the same step with the other fish. Then steamed for 30 minutes..
- Grilled the steamed fish on the grilled pan for about 10-20 minutes..
